在六七年前吃到老媽拌麵在台灣的分店, 覺得驚奇的事, 即食麵可以成為餐廳唯一的主打, 再加上稍為高檔的食材, 就可以上到飯枱. 想不到品牌在香港開始的分店相當多, 也是台灣餐飲品牌在香港開設得店的其中一家. 基本上主食就是品牌的拌麵和醬汁, 例如我吃的是椒麻囗味, 加上肥牛和滷蛋, 基本上醬汁的濃烈味道, 蓋過了牛肉的肉味, 至於厚實的麵條, 不容易煮得太腍, 所以吃起來口感還是可以的. 70多元一碗麵, 成本控制相對簡單, 邊際利潤比一般的更多.小食的炸雞配上豆乳醬, 反而見得出心思, 豆乳醬吃起來似少鹹的腐乳, 配上香脆的炸雞味道突出, 只是炸雞的炸粉有點好, 吃起來醬汁的味道不能深入雞肉之中, 有點可惜.I tried this at a Taiwan branch and was amazed that instant noodles were the main dish at a restaurant. It costs over 70 HKD per bowl and has a simple cost control, resulting in higher profit margins. The soy milk sauce on the fried chicken snack was thoughtful and paired well, but the breading on the chicken was too thick, preventing the sauce from penetrating the meat.
