Japanese Chefs would make them fresh on the iron plate in front of the bar seats and you can observe how chef builds up layers of ingredients. The savory pancake was soft and airly, also with lots of flavor : sweetness from cabbage, umami from seafoods and pork, and the sauces beautifully paintedon top. The size may not seem big, but surely it was a filling meal, along with the salad and miso soup being served.
