Was in the mood for sth as old school local comforting food, and what's better than a dish of Cantonese-styled roasted meat rice ? The chicken served here wasn't limited to the plain & soy sauce flavors, but they also provides options of sand ginger, spicy, drunken and their famous oolong tea smoked one, which elevated the chicken's own umami well. The chicken had tender meat with thin bouncy skin. But as it was cooked to just right, the bone may still seems a bit bloody, so beware of your own tolorance toward that. Others items were regular but together made it quite a good deal. The service was exceptional. This small ramen restaurant with only several seats, is located at 虹橋, edge of the Tuen Mun city center. At the frontdoor, you will first see detailed rules for noticing their customer that this is not a place for a quick meal, but to enjoy a complete experience. --- The owers, who have coffee brewing background along, noticed the way that coffee can bring out the Umami from ramen and then want to spread this new concepts among the world. However, as I can't handle caffeine well, I just sticked to the normal menu and focus on trying their ramen. --- ▪️🍜 地。頂立豚背脂豚骨湯 $95 I picked the pork bone broth ramen since it's the special kind that added pig's back fat pieces into the soup. This results in a "creamy" and flavorful soup. To make it more special, the ramen is topped with Osmanthus fragrans. It may seem weird to see this combination, but it turns out to make the soup less heavy tasting, and add a subtle floral flavor at the end. Ramen made in their own recipe had a good soup hanging characteristic and the sous vide chicken breast was tender and rich in its own umami. --- ▪️🍮 昭和風硬布丁 $35 While it's a trend of making the photogenic shaky shaky pudding, owners here stick to the traditional one, which is more condensed and topped with burnt caramel with mild bitterness. Located in the famous eatery building at the center of Tsuen Wan. This spacious restaurant has over 100 seats and all tables are placed next to a giant water-tank, which is filled with swimming live shrimps. And there is an area that you can pick the skewers, seafood, vegetables and various drinks. The highlight is definitely the seafood session : abalone, scallop, clam, daily catch fish and so on... Surely seafood lovers would be satisfied with this. --- A 𝒇𝒂𝒕𝒕𝒚 𝒆𝒆𝒍 𝒔𝒌𝒆𝒘𝒆𝒓 would be served per person at first, and this is the only item being limited. The electronic barbecue stove was able to effectively heat up all the food, and amazingly never burnt the food but brought crispy edges and keep the juiciness of the food itself, and diverse seasoning are provided on each table. Other than the shrimp with juicy head cream, I would highly recommend to also have : 𝑪𝒉𝒊𝒄𝒌𝒆𝒏 𝑺𝒌𝒊𝒏 (crispy af but not oily), 𝑺𝒄𝒂𝒍𝒍𝒐𝒑 (they provide glassnoodle, garlic and spring onion, so you can make your own seafood-restaurant-styled grill scallop), 𝑪𝒉𝒂𝒓𝒔𝒊𝒖 (the look before bbq isn't tempting, but taste perfect after grilled to slightly charred), 𝑲𝒊𝒏𝒈 𝑶𝒚𝒔𝒕𝒆𝒓 𝑴𝒖𝒔𝒉𝒓𝒐𝒐𝒎. They not only have a wide range of food for bbq, they also have over 10 kinds of icecream to give a sweet chilling end of the meal, so make sure you save up some room for the dessert as well. TBH, the skewers they provided are certainly not sth upscaled, but for such price and variety, we absolutely had no complain. And as a person with weak stomach upon seafood, I was safe after that meal loaded with seafood👍🏽. --- The service was as good as the food. The staff would introduce the equipments for the shrimp catching and barbecue when seated. Sauce was creamy but black truffle flavor needed to be enhanced and the mushrooms were a bit bland to my taste. However, the pumpkin soup was excellently executed: flavorful, creamy, silk, while the tiramisu was also tasting good. By observing the tables around me, it seems like their salad and meat courses are tasting good as well. Japanese Chefs would make them fresh on the iron plate in front of the bar seats and you can observe how chef builds up layers of ingredients. The savory pancake was soft and airly, also with lots of flavor : sweetness from cabbage, umami from seafoods and pork, and the sauces beautifully paintedon top. The set meal was a really great deal, every dish is generous portioned that we couldn't finish them all, and we were satisfied with every dishes! The hamburg was sealed in a aluminum foil to retain all the juice and it was sizzling when served. The meat was tender and flavorful and I wish they would serve me well heated bread / a bowl of rice to enjoy it along with. This sichuan restaurant offers spicy to general dishes during lunch session, and both the Dry Hotpot (gonna try it next time) and Boiled Fish with Pickled Cabbage seems most attractive. As a portion for a single person, the chef was generous enough to make customer feeling full without eating the rice served along with the set meal. Soup was flavorful, not too spicy but warming your stomach. Sliced fish fillet was tender but not being overly fragile when you pick it up. Bottomed with sichuan potato glass noodle 寬粉，Asparagus Lattuce 萵筍 and Bean Sprouts 豆芽. The nut powder on top was very nutty and not sweeten. I then mixed with powder into the drink, which gave the drink extra nut flavor and some crunchy texture. Sweetness came from black sugar syrup and the tender boba which has picked up the previous flavor as well.
